Every season, Mélanie gets her hands in the dough with fruit picked fresh at the orchard. Here are her favourite recipes, in video and step by step.

Smoothie Bowl

Five minutes, zero cooking, and so pretty to look at.

I blend the frozen fruit with a little plant-based milk until it's thick, almost like ice cream, then top it however the day calls for. Perfect as a summer breakfast or a healthy snack, made with love from the orchard to your bowl.

Ingredients

  • Base
  • 125 ml (½ cup) frozen blueberries
  • 125 ml (½ cup) frozen raspberries
  • 1 frozen ripe banana
  • 3–4 tbsp plant-based milk
  • Toppings
  • Fresh blueberries and raspberries
  • Chia seeds
  • Almond butter
  • Granola or rolled oats
  • Unsweetened shredded coconut
  • A drizzle of honey or Érablière Charbonneau maple syrup

Method

  1. 1

    Blend the frozen fruit with the plant-based milk.

  2. 2

    Add the liquid gradually and stop as soon as it's smooth: the base should be very thick, almost like ice cream.

    Pour into a cold bowl, then arrange the toppings however you like.

Apple, Nut Butter & Cottage Cheese Dip

Two minutes, zero cooking, and full of protein.

A simple snack I put together between two tasks: crisp apple, nut butter that sticks just right, and cottage cheese sweetened with maple syrup. Perfect as a post-workout snack or a quick breakfast.

Ingredients

  • 1 apple, sliced into wedges
  • 2 tbsp almond or peanut butter
  • 150 g (⅔ cup) cottage cheese (or quark)
  • 1 tsp Érablière Charbonneau maple syrup

Method

  1. 1

    Slice the apple into even wedges.

  2. 2

    Spoon the cottage cheese into a small bowl and drizzle with maple syrup.

  3. 3

    Dip each apple wedge into the nut butter, then into the cottage cheese.

Scrambled Eggs with Apple, Cinnamon & Maple

Five minutes, one pan, and an apple that melts gently into the eggs.

Diced apple, a little cinnamon, and eggs beaten with maple syrup: this is the recipe I make when I want a breakfast that tastes like fall, any time of year. Made with love, from the orchard to your plate.

Ingredients

  • 3 eggs
  • 1 apple, cut into small (about ½ inch) dice
  • 1 tsp ground cinnamon
  • 1 tsp Érablière Charbonneau maple syrup
  • 1 tsp butter

Method

  1. 1

    Melt the butter in a pan over medium heat.

  2. 2

    Add the diced apple and cinnamon. Cook 2 minutes, stirring, until the apples are slightly tender.

  3. 3

    Beat the eggs with the maple syrup in a bowl, then pour over the apples.

    Stir gently over medium-low heat for about 2 minutes, until cooked to your liking.

Apple-Strawberry Protein Smoothie

Good for recovery, good for the body. And it takes 30 seconds to make.

After a bike ride or a walk through the orchard, this is my go-to: apple and strawberries for flavour, protein for recovery.

Ingredients

  • 1 apple, cut into chunks
  • 1 handful of strawberries
  • 1 scoop vanilla protein powder
  • 200 ml (¾ cup + 1 tbsp) milk or almond drink
  • 1 tsp ground cinnamon
  • 1 tbsp Érablière Charbonneau maple syrup

Method

  1. 1

    Put all the ingredients in the blender.

  2. 2

    Blend on high for 30 seconds, until smooth.

  3. 3

    Pour into a tall glass and drink right away.

Spinach, Apple, Walnut & Feta Salad

Fresh, colourful, and a dressing that changes everything.

I love this salad because it comes together in ten minutes and has it all: crisp apple, salty feta, crunchy walnuts. Made with love, from the orchard to your plate.

Ingredients

  • Salad
  • 3 handfuls fresh spinach
  • 1 orchard apple, thinly sliced
  • 60 ml (¼ cup) walnuts
  • 60 ml (¼ cup) crumbled feta
  • Dressing
  • 2 tbsp Verger Charbonneau cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 3 tbsp olive oil
  • Salt, pepper

Method

  1. 1

    Whisk all the dressing ingredients together in a small bowl.

  2. 2

    In a large bowl, combine the spinach, apple slices, walnuts, and feta.

  3. 3

    Drizzle with the dressing, toss gently. Serve right away.

Green Apple-Cucumber-Ginger Smoothie

Two minutes, a few simple ingredients… and it tastes like spring.

A smoothie I make whenever I need a light, fresh pick-me-up: green apple for sweetness, ginger for a kick. Made with love, from the orchard to your glass.

Ingredients

  • 1 green apple, cored and cut into chunks
  • ½ English cucumber, cut into chunks
  • 1 piece fresh ginger (about ¾ in / 2 cm), peeled
  • Juice of 1 lemon
  • 2 handfuls fresh spinach
  • 1 tsp Verger Charbonneau cider vinegar
  • 180 ml (¾ cup) cold water
  • 4 ice cubes

Method

  1. 1

    Put all the ingredients in the blender.

  2. 2

    Blend on high for 45 to 60 seconds, until smooth.

  3. 3

    Pour into a tall glass with ice. Garnish with an apple slice.

Apple-Cinnamon Overnight Oats

Make it tonight, and it's ready in the morning!

In the evening, I mix everything in a Mason jar and forget about it in the fridge until the next morning: simple, homemade, from the orchard to your kitchen.

Ingredients

  • 125 ml (½ cup) old-fashioned rolled oats
  • 180 ml (¾ cup) unsweetened almond milk
  • 60 ml (¼ cup) plain Greek yogurt
  • 2 tbsp Verger Charbonneau apple butter
  • 1 tbsp chia seeds
  • ½ tsp cinnamon (or less to taste)
  • ½ apple, diced
  • Walnuts
  • Honey (optional)

Method

  1. 1

    Combine the oats, milk, yogurt, apple butter, chia seeds, and cinnamon in a Mason jar.

  2. 2

    Mix well, cover, and refrigerate overnight.

  3. 3

    In the morning, top with diced apple, walnuts, and a drizzle of honey.
